Beef Tips and Noodle Casserole

This is a family favorite. My mother worked and quite often made a 'one pot meal' before leaving for work. She worked a 3-11 PM shift but we always a hot meal for dinner waiting for us when we got home from school and activities. (Thanks Mom!)
1 1/2 lbs beef tips
1/4 cup olive oil for browning the meat
1/2 cup flour
1/2 cup white wine
1 tsp garlic powder
1/2 tsp black pepper
1 tsp salt
1 tsp basil
1/2 tsp nutmeg
1 large onion (diced)
1 lb fresh mushrooms
4 cups of beef broth
1 can condensed mushroom soup
1 pint sour cream
1/4 cup chopped parsley for garnish
1 lb of egg noodles
Dredge the beef tips in flour, shake off excess flour. Heat olive oil in dutch oven, once heated heated, brown the beef tips. Add diced onion, wine, herbs and spices to the pot and bring to a slow boil. Reduce heat and add mushrooms, beef broth and simmer for 10 minutes. After pot has simmered for 10 minutes add mushroom soup and stir until creamy consistency. Remove from heat. Prepare noodles according to package directions. When noodles are fully cooked and drained, add them to the meat mixture. Stir in pint of sour cream (if mixture is too thick, add a little bit of milk). Sprinkle with parsley and heat in oven 350 for 20 minutes.
