I married into an Italian family with a long standing reputation of great cooking. Unfortunately my husband's grandmother is no longer with us, so I've had to develop me own recipes that meet his hungry Italian family's expectations.
3-4 lb Chuck roast
3 tbsp flour
4 cups beef stock
1 cup red wine (like Chianti)
1 cups chopped celery
1 medium onion, chopped
1 cup chopped carrots
1 tbsp tomato paste
1 tsp garlic powder
1 tsp oregano
Salt and pepper to taste
2 tbsp fresh shopped parsley
Mom's Sunday Italian Pot Roast Recipe at
Coat beef in flour and brown on all sides in large Dutch oven or stock pot.

Chop vegetables so they're all in the same sized pieces. Add to pot with beef

Add tomato paste and garlic powder and oregano to the pot

Add beef stock and wine to the pot.

Cover and simmer until beef is cooked and falling apart and the liquid has thickened (approx 2 hours).

Serve over Parmesan polenta and garnish with parsley.

Amazingly good.
This brought back such memories of growing up in a large Italian family, and our Sunday dinners. Perfect as written- delicious! Thanks Stephanie.
