Cauli-Broc Casserole

1 large bag frozen cauliflower, broccoli, or mix (use the Steamfresh you can thaw in the bag in the microwave leave in for 2 minutes DO NOT COOK)
1 small onion finely chopped
1 can Campbell's cream of mushroom soup
1 egg, slightly beaten
3 Tablespoons melted butter
1/4 cup reduced fat Breakstone's sour cream
1/4 cup Duke's Light Mayonaise
1 8 oz. bag of Kraft Four Mexican cheese(not the one with spices)
a few crushed Ritz crackers (optional)
1. Using microwave safe casserole dish melt butter 20 seconds or so.

2. Pour in cream of mushroom soup, egg, sour cream, and mayonaise, mix well.

3. Open the bag of thawed cauliflower, broccoli, or mix and pour into mixture, then add onion. Stir toss well.

4. Add 1 1/2 cups of the cheese mix well, and reserve the other half cup of cheese.

5. Place in 375 degree preheated oven for 35 minutes.

6. Remove and sprinkle remaining cheese on the top center and the (optional crushed crackers) around the edge.

7. Place back in oven for about 15 minutes longer.
