This hot dish recipe is great for brunch, dinner, or as a side dish if you omit the bacon. It works well for parties, and you can substitute other meat (ground beef, ham) for the bacon, make ahead of time, freezes well, and is a huge family favorite.
RECIPE INGREDIENTS
1 bag (32 oz) frozen southern style hash browns
1 16oz carton sour cream
1 can condensed cream of chicken soup
1 medium diced onion
2 cups shredded cheddar
1-2 lbs bacon (ends and pieces work better than strips)
3 cups crushed corn flakes
1 stick melted butter
DIRECTIONS
Let frozen hash browns sit out to thaw while cooking bacon. Cook till crispy, but be careful not to overcook. Drain on paper towels until cool enough to handle.


Set oven to preheat at 350


Dice onion, and put in very large mixing bowl.


Add sour cream, soup, and cheddar to bowl.


Mix all thouroughly.


Add hash browns and break bacon into bite sized pieces into bowl. Don't crumble the bacon too small!


Mix all again thorougly.


Spread into buttered 9x13 baking pan


Crush corn flakes, put into small bowl, add melted butter and mix thorougly to distribute evenly.


Sprinkle evenly over entire top of hot dish


Bake for an hour. Adjust time if center doesn't look melted/bubbly under the crumb mixture compared to edges.

Awsome
This was an easy and delicious Mother's Day brunch meal, everyone LOVED it! I used cream of mushroom soup, added cracked black pepper, chopped the bacon up before frying it & crushed Special K w/ the melted butter was the topper...WOW everyone loved the dish. Thank you for sharing
