Beans "n Greens Supreme

This dish is full of fiber, flavor and low on sodium. Notice no additional spices are added.
1/4 cup each dried pinto, red, great northern, navy and lima beans (soaked overnight)
one large onion (chopped)
1/2 bunch celery (chopped)
3 carrots (sliced)
one bunch of Kale (de-stemmed and chopped) or fresh spinach
one can diced tomatoes (14.5 oz.)
one 16 ounce bag of frozen chopped okra
one smoked Turkey wing
one or two whole jalepeno peppers (optional)
Rinse and soak beans overnight in plenty of cold water to cover three inches above Bean level.

Drain beans and rinse again returning to large pot.

Add chopped onion, celery, carrots, Kale, diced tomatoes, chopped okra and smoked Turkey wing. (Jalapeno peppers if you wish)

Add hot water to cover mixture by two inches. Bring to a boil and reduce to simmer with lid slightly open. Stir every 20 minutes. When Turkey wing is cooked "fall off bone" tender, remove it from the mixture and separate meat from bone and skin. return meat to pot and discard bone/skin. Add water if needed. Cooking time (1.5 to 2 hours or till well blended and tender. Add parmesan cheese as garnish when served if desired.
