Rainbow Bean & Feta Salad

Easy to prepare, even easier to eat - endless variations of bean combinations.
1 can (15.5 oz) Cannellini (or butter) Beans
1 can (15.5 oz) Black Beans
1 can (15.5 oz) Red Pinto Beans
2 oz Feta Cheese – cut into ½” cubes
2TB (2 small) shallots, chopped fine
1 bunch Cilantro – chopped
2 Cloves of garlic, chopped fine
Zest of 1 lime
1 TB Dijon Mustard
4 TB Fresh Lime Juice (1-2 limes)
6 TB Olive Oil
½ tsp Salt, or to taste

1. Put all the beans (one can at a time) into a strainer, rinse briefly in cold water, drain well. Add to a medium size bowl.

2. Add shallots and cilantro

3. Prepare dressing: combine lime zest and juice, mustard in a small bowl. Add salt and pepper. Slowly add olive oil while whisking the mixture. Taste and adjust seasoning.

4. Combine dressing with the beans. Add cheese and gently toss again, trying not to crush the cheese too much.

5. Let rest for at least 30 minutes. Can be prepared 8 hrs in advance. If refrigerated, make sure to rest at room temp. at least 30 minutes before serving.
