Holiday Hues Potato Casserole

When you want "a rainbow on your plate" for the holidays, try this dish!
1 small bag of red, white or blue potatoes, or combo
5 pickled okra pods
1/2 of a red onion
2 small cartons plain, nonfat yogurt
Red wine vinegar
Sunflower seeds
Cut potatoes in quarters, leaving skins on.

Arrange potatoes, skin side up, in a single layer on the bottom of a glass or ceramic baking dish.

Cut pickled okra pods into small rounds and drop on top of potatoes to fill in spaces.

Cut 1/2 red onion into small pieces and distribute evenly over above.

Spread yogurt in a layer on top of casserole.

Sprinkle red wine vinegar over all to a depth of about a quarter inch in pottom of pan.

Smooth yogurt to cover.

Sprinkle sunflower seeds on top and bake at 350 degrees for about two hours.

Enjoy while warm!
