Oven Fries with Bacon, Caramelized Onion Dip

Chunky potato is dipped in a rich and creamy dip.
4 large baking potatoes, unpeeled
2 tsp olive oil
1/2 tsp salt
1/2 tsp black pepper
Bacon Caramelized Onion Dip:
4 slices bacon
1 TBSP butter
1 large sweet onion, sliced thinly
1 tsp fresh rosemary, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp sugar
1(16 oz) container Daisy sour cream

Preheat oven to 425 degrees. Cut potatoes in half lengthwise, then cut each half into thick wedges. ( 4 per half ) Place wedges on a baking sheet. Drizzle with olive oil; toss to coat. Sprinkle with salt and pepper. Bake approximately 25 minutes, turn wedges over and bake until tender and golden brown approximately 10-15 minutes longer.


In a large skillet cook bacon until crisp. Drain on paper towels, set aside. Add the butter to the same skillet used to cook the bacon and melt butter over medium high heat. Add the onions, rosemary, salt, pepper and sugar. Cook, stirring often, until the onions are very soft and golden, about 25 minutes. Remove from heat. Let cool completely.

In a 2qt serving dish combine crumbled bacon, add the sour cream. Stir in the cooled onions, mix well. Serve immediately or refrigerate until serving time. Bring to room temperature before serving.

** Warning, this recipe is very addictive !!!!! It's perfect for kids and adults both. Also excellent with slices of fresh baguette.
