Irish Eye-Opening Casserole

Baked eggs on top of a has brown casserole
Non-stick olive oil flavored  cooking spray
1 Package Simply Potatoes Shredded Hash Browns
1 cup grated white cheddar cheese
1 cup finely grated  green cabbage
1/2 cup chopped green onion
1/2 cup sour cream
2 tablespoons prepared horseradish
6 large eggs
Fresh cracked black pepper
Preheat oven to 375.

Spray a 9-inch square baking pan with the non-stick spray.

In a large bowl mix potatoes, cheese, cabbage green onion, sour cream and horseradish until blended, spoon into prepared pan.

Bake in center of oven uncovered until bubbly about 30 minutes.

Remove from heat, with back of large spoon make 6 evenly spaced indentations on top of casserole then crack an egg into each indentation.

Return casserole to oven and bake uncovered until egg whites are firm and yolks move slightly when touched about 10 to 12 minutes more.

Cut between eggs and garnish with desired amount of fresh cracked black pepper.

Serves 6.
