Smoked Ham and Camembert Salad with Creamy Pecan and Lemon Dressing

RECIPE INGREDIENTS
For the Dressing:
1/2 cup shelled pecans
Juice of 2 lemons
1 clove garlic
1/4 teaspoon salt
1/2 cup olive oil
1/2 cup sour cream
2 tablespoons finely chopped chives
Grated zest of 1 lemon
1 head butter lettuce, washed and torn
1 1/2 oz snow pea sprouts
2 Granny Smith apples, cut into julienne and sprinkled with the juice of 1/2 lemon juice
6 1/2 oz smoked ham, cut into julienne
6 1/2 oz camembert, at room temperature, thinly sliced
2 1/2 oz pecans, toasted and roughly chopped

DIRECTIONS
FOR THE DRESSING:
Chop the pecan nuts finely in a food processor. Add the lemon juice, garlic, salt and oil and process until well combined. Add the sour cream, chives, and lemon zest (rind) and combine thoroughly.


TO SERVE:
Arrange the salad ingredients on a serving platter or individual plates. Spoon the dressing over the salad.
