Broccoli Salad with Basil Vinaigrette

RECIPE INGREDIENTS
1 lb broccoli, trimmed and cut into florets
1 red bell pepper, roasted, peeled and cut into thick strips
1 yellow bell pepper, roasted, peeled and cut into thick strips
2 tablespoons tiny capers, drained
3 small green onions, thinly sliced
1/3 cup sun-dried tomatoes, chopped
For the Dressing:
2 tablespoons basil oil
2 tablespoons olive oil
1 tablespoons balsamic vinegar
1 clove garlic, crushed
salt and fresh ground black pepper

DIRECTIONS
Steam the broccoli until barely tender, 3-4 minutes. Rinse under cold water and drain well.


Combine all of the salad ingredients in a large bowl.


FOR THE DRESSING:
Combine all of the dressing ingredients in a small bowl. Whisk until thoroughly combined.


Pour the dressing over the salad. Toss carefully and serve.
