For Dressing:
2 tablespoons walnut oil
2 tablespoons olive oil
2 tablespoons sherry vinegar
1 teaspoon Dijon mustard
1 large ripe avocado
Juice of 1 lemon
1 bunch English (leaf) spinach, washed and torn
1 small head radicchio, washed and torn
3 1/2 oz mild blue cheese, sliced or crumbled
1/3 cup brazil nuts, roughly chopped
1 teaspoon snipped fresh chives

FOR DRESSING: Combine all of the dressing ingredients in a small bowl. Whisk until well combined.

Peel, pit and slice the avocado and toss in the lemon juice to prevent discoloration. Combine the avocado and all of the remaining salad ingredients in a large bowl. Pour over the dressing and toss carefully. Serve immediately.
