Carrot, Peanut and Raisin Salad with Cumin Dressing

RECIPE INGREDIENTS
For the Salad:
2 to 3 large (13 oz) carrots, cut into julienne
2 tablespoons sesame seeds, toasted
1/2 cup dry roasted peanuts, roughly chopped
1/2 cup golden raisins, chopped
2 tablespoons finely chopped fresh coriander (cilantro)
For the Dressing:
1 tablespoon olive oil
Juice of 1 lemon
1 clove garlic, crushed
1/4 teaspoon sugar
1/2 teaspoon ground cumin
salt and freshly ground black pepper

DIRECTIONS
FOR THE SALAD:
Combine all of the salad ingredients in a large bowl.


FOR THE DRESSING:
Combine all of the dressing ingredients in a small bowl. Whisk thoroughly until combined. Pour the dressing over the salad and toss thoroughly.


Serve at room temperature. This salad makes a good accompaniment to a curry.
