One 17-ounce package frozen puff pastry (2 sheets), thawed
1/4 cup olive oil
4 medium onions, sliced into rings
2 tablespoons balsamic vinegar
2 large tomatoes, sliced
1 large red bell pepper, roasted, cut into strips
6 black olives, pitted, halved
2 canned anchovies

Preheat oven to 350 degrees F.

Roll out pastry and line a 10-inch round pie dish. Line pastry shell with foil and weigh down with pie weights or dried beans and bake in oven for 15 minutes. Leave oven turned on.

Meanwhile, heat oil in a large pan. Add onions and cook gently for 10 minutes. Add balsamic vinegar and simmer for another 10 minutes. Remove from heat and drain onions.

Fill pastry case with onions; arrange tomato, bell pepper strips, olives and anchovies on top. Bake in oven for 30 minutes. Serve.
