Spiced Nuts

  Makes 1 1/2 cups
1/2 cup pecan halves
1/2 cup walnut halves
1/3 cup unsalted cashews
1/3 cup unsalted peanuts
2 tablespoons vegetable oil
1 teaspoon curry powder
1/2 teaspoon chili powder
Preheat oven to 350 degrees F.

Combine nuts in a large bowl. Heat oil in a pan over moderate heat. Stir in curry powder and chili powder. Heat until aromatic. Pour oil over nuts and cover completely by stirring.

Place nuts on a large baking sheet. Roast in the oven for 15 minutes, stirring occasionally. Add salt to taste. Serve warm or at room temperature. Store in a sealed jar.
