  Makes about 1 cup (Serves 8)

1 cup lightly packed fresh parsley leaves
2 large cloves garlic, smashed
1 teaspoon dried thyme
1/4 teaspoon dried red pepper flakes
1/2 cup water
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/8 teaspoon fresh-ground black pepper

Put all the ingredients in the blender. Puree until almost smooth.

I used this sauce over grilled steak which was served over black beans. The sauce is easy to make ahead, it stays good in fridge overnight or until the weekend. I tuned down the red pepper flakes slightly for a friend who does not like spicy food but it didn't affect the recipe. Another time I served it full on. Always gets good feedback, very tasty.
