Yogurt, Oat Batter Bread

Make your own apple pie spice for this sweet batter bread by stirring together 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and 1/8 teaspoon ground ginger.
RECIPE INGREDIENTS
2 cups all-purpose flour
1/4 cup quick-cooking rolled oats
1 package active dry yeast
1 teaspoon apple pie spice
1/2 cup plain yogurt
1/4 cup packed brown sugar
1/3 cup water
1/4 cup butter
1/2 teaspoon salt
1 large egg
2 tablespoons quick-cooking rolled oats

DIRECTIONS
Preheat oven to 375 degrees F. Lightly oil 1 1/2-quart soufflé dish or casserole. Sprinkle with 1 tablespoon of the oats. In a large mixing bowl stir together 1 cup of the flour, 1/4 cup oats, yeast and apple pie spice; set aside. Stir yogurt, brown sugar, water, butter and salt in medium saucepan over medium heat until mixture is warm (about 125 degrees) and butter is almost melted. Add to flour mixture. Add egg. Beat with an electric mixer on medium-low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in remaining flour. (The batter will be sticky.) Spread batter in dish. Sprinkle with remaining 1 tablespoon oats. Cover and let rise in a warm place till nearly double (about 30 to 40 minutes).


Bake until tester inserted near center comes out clean, about 40 minutes. Remove bread from pan; cool on a wire rack.
