Mashed Potatoes

As an option, if you enjoy the flavor, add 2 cloves of pureed or roasted garlic while mashing the potatoes.
1-1/2 pounds potatoes peeled and chopped
1 cup milk
2 tablespoons butter
salt to taste
Place the potatoes in a saucepan of salted water and bring to a boil. Turn down the heat and simmer for about 20 minutes, or until tender. Drain and transfer to a mixing bowl. Meanwhile, in a sauté pan, melt the butter with the milk, and bring to a boil. With an electric mixer (or a wire whisk), whip the potatoes while drizzling in the milk mixture as needed. Season with salt to taste.
