Kids love to help in the kitchen. A little patience and a bit of planning can turn cookie making into a memorable experience for you and your child. Not only will your little one have fun making these cookies with his or her favorite person, but will feel proud when sharing and eating them with others. Chilling the dough until it's firm makes rolling and cutting the dough easy. Dip the cookie cutter in a bit of flour to help the dough release easily. Have an assortment of decorative sugar crystal colors on hand and let your child be creative. When you provide the guidelines for making cookies, you'll be impressed with the artistic talents of your little one.
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cardamom
1/4 cup solid vegetable shortening
1/4 cup butter, room temperature
3/4 cup sugar
1 large egg
1 1/2 teaspoons vanilla extract
3 tablespoons whole milk

Nonstick vegetable oil cooking spray

Whisk flour, baking powder, baking soda, and cardamom in medium bowl. Using electric mixer, beat shortening, butter, and 3/4 cup sugar in large bowl until light and creamy. Beat in egg and vanilla. Mix in dry ingredients alternately with milk, beginning and ending with dry ingredients. Divide dough in half. Flatten each half into disk. Wrap in plastic and refrigerate until firm, about 1 hour.

Preheat oven to 375 degrees F.

Spray 2 large baking sheets with nonstick spray. Roll out 1 dough disk on well-floured surface to 1/8-inch thickness. Using 3-inch-diameter cookie or biscuit cutter, cut out cookies. Transfer cookies to prepared baking sheets. Gather and reroll scraps. Cut additional cookies.

Sprinkle cookies with sugar crystals. Bake until cookie edges are golden brown, about 8 minutes. Transfer to rack and cool completely.

Can be prepared 1 week ahead. Store airtight.
