Hoppin' John is a traditional New Year's Day dish in the South, but it is enjoyed year round. Though it often contains bacon or ham, this vegetarian version is great for picnics, or as a side dish. It is also an excellent source of fiber!
For the Salad:
6  cups cooked black-eyed peas
1 small red onion, diced fine
1 cup red bell pepper, diced fine
2 tomatoes, seeded, diced fine
6 cloves garlic, minced
1 1/2 cups cooked white rice
1 cup fresh corn kernels
3/4 cup green onion, minced
1/2 cup cilantro, chopped
For the Dressing:
2 tablespoons olive oil
1 tablespoon lime juice
1 tablespoon cider vinegar
1 teaspoon salt and freshly ground black pepper
Add ingredients together in medium mixing bowl.

Combine ingredients for the dressing. Pour over vegetables and toss gently.

great recipe
I was looking for a recipe similar to a hoppin john salad i had last year, and this was pretty close. i used quinoa instead of white rice (1.5 cups dry quinoa since its smaller) and doubled the dressing since i went over on pretty much all the other ingredients by a bit. i also added about a tablespoon of hot sauce to the dressing. it's delicious and will only get better with a day in the fridge!
