  Makes 1/2 cup, serves 4
This recipe gives you more butter than you need for 4 burgers, but it's easier to make it in a larger batch. The excess freezes well.
2 tablespoons finely chopped fresh herbs, such as parsley, chives, tarragon, basil, and/ or tarragon
1 garlic clove, minced
1/2 teaspoon freshly ground black pepper
1/2 cup (1 stick) butter, room temperature

Whisk the herbs, garlic, pepper, and butter in a mixing bowl until light and fluffy. Alternatively, blend ingredients in a mixer or food processor.

Lay a 12 inch-square piece of plastic wrap on your work surface. Mound the butter in the center. Roll it up into a cylinder, twisting the ends to make a compact tube. Chill the butter in the refrigerator or freezer until firm. It will keep for up to 5 days in the refrigerator or up to 3 months in the freezer. To use, unwrap the roll and cut widthwise into 1/2 inch slices.
