RECIPE INGREDIENTS
1 teaspoon black peppercorns
1/2 tablespoon whole cloves
6 pods black cardamom (available in Indian grocery stores)
12 pods green cardamom
2 pieces, each 2 inches long, cinnamon
1 tablespoon cumin seeds
4 dried whole red chilis
DIRECTIONS
Grind all the ingredients in a spice grinder until pulverized. Store in an airtight jar. Makes 1/3 cup.


If you are unable to access black cardamom, omit it. For additional flavor, you can add 1/2 teaspoon each of ground mace and ground nutmeg.
