Basic Tomato Sauce

  Makes 4 cups (Serves 8)
2 large onions
2 cloves garlic
1 tablespoon olive oil
2 pound ripe tomatoes
Peel and finely chop the onions and garlic. Saute in the olive oil over low heat for approximately 10 minutes, or until they are transparent. Roughly chop the tomatoes and add to the onions.

Cook the mixture over a medium heat for 35-40 minutes, or until it begins to thicken. Cool.

This mixture can be stored in the refrigerator for up to one week.

Serving size = 1/2 cup
