Galette Dough

1 large egg yolk
1 teaspoon distilled white vinegar
1/3 cup (about) ice water

2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup (2 sticks) chilled butter, cut into 12 pieces

Whisk egg yolk and vinegar in 1-cup glass measuring cup. Add enough ice water to make 1/2 cup liquid total.

Blend flour and salt in food processor. Add butter. Using on/off turns, mix until coarse meal forms. Add liquid in a steady stream and pulse until dough is moist but does not form a ball. Remove dough. Divide dough into 6 equal pieces. Flatten each dough piece into disk. Wrap dough in plastic and refrigerate until ready to use, about 30 minutes.
