RECIPE INGREDIENTS
4 ears corn, roasted or grilled, kernals removed
1 can black beans, drained and rinsed
1/4 cup jalapeno pepper, seeds and ribs removed
1 medium tomato, chopped, seeds removed
1/4 cup cilantro, chopped
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
Juice of one lime
Salt and pepper, to taste
DIRECTIONS
Combine all ingredients, chill for at least one hour to allow flavors to combine, and serve.

Ears of corn don't mix
It is very hard to mix the 3 - 4 ears of corn with all the small ingredients!
