The definition of hearty, jambalayas are always infused with the Creole or Cajun flavors of Louisiana. In fact, they're a New World version of an Old World recipe: paella. The original Creole version uses tomatoes, as saffron was hard to come by, and the Cajun version omits the tomatoes and uses a variety of meats, with more of a brown sauce base.
