Here's a one-pot meal with lots of kick. Andouille sausage, chicken, rice and vegetables cook together amongst hot spices. This dish cooks fast and makes for great left-over lunches the following day. Choose a mildly flavored sausage if you want to cut back on spiciness. If you prefer, you can use turkey or chicken sausages. For a little extra color and crunch, this light green salad is the perfect mate for jambalaya. If you cannot find fresh arugula, substitute fresh baby spinach leaves. The best part about these brownies, besides their nutty, chewy texture, is how easy they are - mixed and baked in the same pan!
