Brussels spouts are a member of the cabbage family, and resemble tiny-cabbage heads. The smaller the sprout, the sweeter and more tender it is. The flavor intensifies if the sprouts aren't used soon after they are purchased so use them within three days of purchase. Sauté them with fresh thyme, or choose other herbs such as basil or marjoram. Before soaking the chicken in a mustard and wine marinade, wash and pat-dry the chicken breasts. Marinate the chicken for up to 2 hours before coating with the Parmesan and breadcrumb coating. Roast the chicken breasts at about 450 degrees F for 45 minutes. This dish can also be served as an appetizer. Simply cut the chicken in small bite-sized pieces to serve. This French custard dish is baked for about an hour in a caramel-coated mold. After it's been chilled for a few hours in the refrigerator, the custard is turned out onto a serving plate and is glazed with the caramel. A fresh sprig of mint adds color to the plate.
