Inspired by dishes from Irish kitchens, this menu includes a main course of filet of beef that's grilled indoors or out, topped with Cashel Blue Cheese. The sauce has a deep, ruby color that comes from the Guinness beer, beef broth, molasses and tomatoes that are its principle ingredients. Serve the steaks with either a barley risotto or mashed potatoes. Made with red potatoes, these rustic "smashed" potatoes are mashed by hand to give them a coarse texture. Butter and milk add creaminess; shredded cheddar and finely minced chives give color. Dessert is a homemade bread pudding. Whiskey-soaked baguette cubes are combined with raisins, eggs, milk and vanilla and sprinkled with cinnamon and sugar. Bake then serve with a caramel-whiskey sauce.
