Preparation Plan: Make the sorbet in the morning or the night before. Do all "mise en place" (ingredient gathering/measuring, chopping and grating for each recipe) in the morning. 2 hours before serving, start the potatoes, let cool after 1 hour. 30 minutes before serving, heat the grill for the steaks, start shucking the oysters and chill over ice. While the steaks grill, finish baking the potato wedges and quickly sauté the spinach. Serve.
