HOLD THE TOMATO
As an old Texas gal who has made guacamole a thousand times, I say, "Hold the tomato!" It makes the guacamole soggy if it is not eaten immediately after it is made. If you want the extra color, garnish it with a bit of diced tomato on top when you serve it.
