This Mexican dish is fast and easy to make and can be prepped the day before. My family really loves this and I like the change from ordinary everyday meals.
1-2 pounds of 80% ground chuck
1 oz. package of fajita seasoning
2 10.5 oz. cans of cream of mushroom soup
1/2 cup buttermilk
4-oz. can of drained sliced mushrooms(or 1/2 cup of fresh sliced and washed)
1 8.5 oz can of corn (drained)
4 large yukon gold potatoes (washed and sliced thin)
8 oz. pkg. of shredded cheddar cheese
1/4 teaspoon cayene pepper
1/2 teaspoon of salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
pam cooking spray or butter to grease dish
Prehead the oven to 350 degrees.

Crumble ground chuck in skillet and sprinkle with the package of fajita seasoning. Brown meat until done and drain well.

In mixing bowl combine buttermilk, soup, caynene pepper, garlic powder, salt, pepper, and shredded cheese. Mix well.

Wash and slice potatoes (and mushrooms, if using fresh). In a 9x13-in. baking dish, spray or coat bottom and sides with the pam or butter. Spread the potatoes evenly on bottom.

Next add corn, then the mushrooms, then the meat mixture. Pour the mixed wet ingredients over top to coat evenly. Cover tightly with foil and place in oven. Cook for 1 hour 30 minutes.

Take out and let rest for 10 minutes before opening.

This can be a complete meal or you can serve with a small salad on the side.

I made this last night and followed the recipe exactly, minus the fresh mushrooms. After it cooled, the top of it was still loose and soupy. When I cut into it,.it fell apart,.nothing that looked like a piece of anything. It was one big blob of stuff. And it tasted very salty, was not good at all. My first red flag should have been the cream of mushroom soup mixture placed on top. Cream of mushroom soup does not solidify, stays soupy. This thing was awful!!!!
