Quick and Easy Summer Vegetable Skillet Pasta

Quick and easy way to use the summer vegetables right from your garden or the local farm stand.
1 cup diced Vidalia Onion
3 cloves garlic chopped fine
1 pound zucchini squash
1/2 pound green or yellow garden beans
4 small seeded and diced Roma tomatoes
1/2 teaspoon house seasoning (1 tablespoon salt, 1 teaspoon garlic powder and 1 teaspoon ground black pepper)
6 oz cooked ziti or other favorite pasta
1 cup cooked chicken (I used left over grilled chicken breast)
1/2 cup sour cream
1/2 cup chicken stock
3/4 cup cheddar cheese (four cheese Pizza Mix works well)
1/4 cup Parmesan cheese
Saute onions for 5 minuets, add garlic and saute 3 more minutes.

Add all vegetables except tomatoes and saute for three minutes.

Add tomatoes, chicken and seasoning to chicken broth and cooked pasta. Cover pan and cook for 10 minutes.

Combine chicken and pasta with cheese and sour cream. Cook for 2 minutes, sufficiently stirring the sour cream and cheese into a sauce.

Garnish with Parmesan cheese to taste.
