Keep sweet and cool this holiday with this sweet and cool candy cane cake!
1 box of any brand white cake mix
3 eggs
1/4 cup of vegetable or canola oil
1 cup of water
2 teaspoons of mint extract
2 cup of crushed candy canes, divided
Sift cake mix in large mixer bowl. Add eggs, oil, water, and mint extract.

Beat 2 minutes with mixer on medium high speed, stopping occasionally to scrape down sides and bottom of bowl. After the 2 minutes. keep beaters running and sprinkle in 1 cup of the crushed candy canes.

Pour into 2-9' greased cake pans. Bake

350* for 30-40 minutes. Cool in cake pans for 10 minutes, remove and let cool on wire rack. Chill, wrapped in plastic wrap for 1 hour. Frost with vanilla frosting, and sprinkle with the remaining cup of crushed candy canes.
