Sweet Potato Spice Cake

A maple frosting is layered into a moist spice cake.
3 cups all-purpose flour
3 1/2 tsps baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup butter, softened
1 1/2 cups canned sweet potato
1/4 cup water
2 tsps pumpkin-pie spice
3/4 tsp ground nutmeg
1 1/2 cups granulated sugar
3 eggs
1/2 cup evaporated milk
1 1/2 tsps vanilla extract
11 ozs cream cheese softened
1/2 cup butter softened
3 1/2 cups sifted confectionary sugar
2 to 3 tsps maple flavoring
chopped nuts and nut halves
Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans.

For Cake, conbine flour, baking powder, baking soda, pumpkin-pie spice, nutmeg and salt in smal bowl. Beat sugar and butter in large mixing mowl until creamy. Add eggs and beat for 2 minutes. Beat in canned sweet potato, evaporated milk, water and vanilla extract. Gradually beat in flour mixture. Spead evenly into prepared cake pans. Bake for 35-40 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire acks for 15 minutes, remove to wire racks to cool completely.

FOR FROSTING - Beat cream cheese, butter and confectionary sugar in large mixing bowl unti fluffy, add maple flavoring and mix well.

TO ASSEMBLE Cake - cut each cake in half horizontally with long serrated knife, frost between layers and on top of cake, leaving sides unfrosted, garnish with nuts.

This cake is absolutely awesome!! Made it and took it to work and everyone loved it and wanted a copy of the recipe! I will definitely be making this again soon!! Thanks for sharing.
