Beef and Chow Mein Noodle Casserole

RECIPE INGREDIENTS
2 c cooked diced Beef Roast (Also excelent with Elk, Venison or other big game meat).
4 T Butter divided
1 med Onion
8 oz Mushrooms
3 ribs Celery
1 can Condensed Cream of Mushroom or Celery Soup
1 cup Milk
1 cup Mixed Vegetables
2 T Parsley
Salt and Pepper to taste
2 c Chow Mein Noodles
DIRECTIONS
Preheat oven to 350.


In 2 T butter sauté meat until heated through and season to taste.


Place in 3 quart oven safe casserole.


With remaining 2 T butter sauté onion, mushrooms and celery until tender and season to taste.


Add parsley.


Add soup and milk to mushroom mixture and bring to boil. Simmer 1 minute.


Add Mixed Vegetables.


Pour soup mixture over meat in casserole.


Top with chow mein noodles.


Bake for 30 minutes.


Let stand 5 to 10 minutes before serving.
