This is a quick casserole that serves up to 8 or more. If you like shrimp and rice, you will love this recipe. It's really great with a warm, crusty garlic bread and a salad, or it does well on its own.
1 1/2 pounds raw shrimp (peeled & deveined)
2 cups cooked rice
2 cans cream of mushroom soup
1 can cream of shrimp soup
1 can Ro-tel tomatoes (with green chiles)
1 green bell pepper (diced)
1/2 large yellow onion (diced)
1 cup chopped celery
2 Tbl butter
While cooking the rice, saute onion, bell pepper and celery in butter until softened. Mix the three soups and Ro-tel tomatoes together until blended. Add the sauted vegetables, cooked rice, and raw shrimp and stir all together. Spray a 9x13 pan with non-stick spray, and add all ingredients. Bake at 350 for 30 minutes. Let stand for 10-15 minutes before serving.
