Cheesy Potato Soup

Nothing better than a thick, cheesy soup for dinner!
5-6 medium potatoes
half a block of velveeta cheese (regular or mexican blend)
1/3 cup chopped onion
1 can of cream of mushroom soup
Cut potatoes to desired size. Small or larger chunks are fine. you can peel them or not. some people like the skins on. Chop onions. Place potatos and onion in large pot and add enough water to just cover the potatoes.

Boil until potatoes reach the desired softness. Lower heat and Add small chunks of veleeta. The smaller the size, the easier and faster it will melt. Stir at regular intervals to help the cheese melt. Add the can of mushroom soup. Continue to stir over low heat until all of the cheese is melted. You may add more water or even some milk if you like a soupier mixture.
