My father's sweet & sour cabbage soup, which he call krout borscht. It needs a big enameled or strainless steel pot (2-3 quarts) with a tight lid. For vegans, skip the meat and use vegetable broth instead of water.
1 lb beef flanken (a strip of meat cut across the ribs)
one can of crushed tomatoes in tomato puree.
one medium size green cabbage, coarsely chopped,without the core.
2 medium onions, coarsely chopped
1/4 cup brown sugar
juice of 2 lemons
boiling water
roast the meat in a medium oven until browned.

remove the short bone segments from the meat.

cut the meat into small chunks.

saute the onions in a little oil with the bones until onions are soft.

add enough boiling water to cover the bones and simmer for about an hour.

remove the bones.

add the meat, cabbage, and the can of tomatoes.

simmer, covered about 2 hours, until the cabbage is cooked.

add lemon juice and brown sugar.

simmer a little longer and taste it.

add brown sugar or lemon juice or vinegar to taste.
