Dry Rubbed Ribeye with Mango BBQ Sauce

RECIPE INGREDIENTS
Ingredients for Rub:
2 whole coffee beans
½ Tbs black peppercorns
½ Tbs mustard seeds
1 Tbs paprika
½ tsp cayenne pepper
2 tsp garlic powder
1 Tbs Sea salt
1 Tbs brown sugar
1/8-tsp fresh ground nutmeg
Ingredients for Mango Sauce:
½ cup ketchup
1 ripe mango, peeled and smashed with fork
3 Tbs balsamic vinegar
¼ cup beef broth or stock
1 Tbs Worcestershire
1 Tbs A1 steak sauce
1 Tbs dark molasses
½ Tbs red wine vinegar
½ Tbs Dijon mustard
1 Tbs brown sugar
3 cloves garlic, crushed
3 Tbs minced onion
6 black peppercorns
1 bay leaf
4 large bone-in rib eye steaks, about 1 ½-inches thick and
2 lbs each.

DIRECTIONS
Preparation for Rub:


Add coffee beans, peppercorns and mustard seeds to processor and blend until coarsely ground. Combine all rub ingredients and set aside.


Preparation for Sauce:


In a small saucepan, combine all sauce ingredients. Bring to a slow boil, and then simmer for 15-20 minutes, until sauce reduces to make a semi-thick sauce. Strain and set aside, keeping warm but not hot.


Preparation for Meat:


Rub steaks with rub mix and let set for 30 minutes at room temperature. Heat grill on high for 5 minutes. Sear steaks over high heat for 8 minutes, turning after the first 4 minutes. Remove steaks to the side of grill and continue cooking over indirect heat for additional 10 minutes or until desire doneness. Let steaks rest for 10 minutes before serving.


Serve steaks with warm steak sauce.
