Potato Sausage Stuffing

Pork, chorizo and potatoes make this casserole enough for even the biggest eaters.
1/2 pound of ground pork
1/2 pound of chorizo
2-4 potatoes, peeled and diced
1 1/2 c chopped celery
3/4 c diced onion
3/4 c butter
9 cups of soft bread cubes
1/2 tsp dried thyme
1/2 tsp ground sage
*you can substitute using poultry seasoning)
1 tsp salt
1/4 tsp pepper
1 can of chicken broth
Preheat oven to 350*

Place sausage, chorizo, potatoes, celery, onion and butter in a large deep skillet. Saute over medium high heat until sausage and chorizo are evenly cooked. (I drain the fat)

Combine the bread cubes, thyme, sage (or poultry seasoning), salt and pepper to taste. Toss together with the sausage/chorizo and potato mixture. Add chicken broth if needed.

Bake stuffing in a covered casserole dish for 40 - 50 minutes.
