This rich pasta dish full of bright tomatoes and salty bacon is the perfect dish for a hungry crowd.
RECIPE INGREDIENTS
• 1 pound bucatini or thick stranded spaghetti (see note)
• 1/2 pound thick sliced bacon diced
• 3 cans diced tomatoes
• One medium onion, minced
• 1½ tsp red pepper flakes
• 4 T olive oil
• An abundance (a cup) of freshly grated Pecorino Romano

DIRECTIONS
Set the pasta water to heat, salt it when it boils, and cook the pasta.


While this is happening, heat the oil in a skillet, add the diced bacon, and cook until it browns, stirring the pieces about. Remove them to a sheet of absorbent paper with a slotted spoon and keep them warm.


Add the onion to the grease in the pan, together with the hot pepper, and when it begins to color add the tomatoes and their juices. Cook, stirring, for 5-6 minutes, then return the diced bacon to the pot and heat it through.


Drain the pasta while it's still a little al dente, turn it into the skillet with the sauce, cook a minute more, stirring the pasta to coat the strands, and serve, with grated pecorino in a big- assed bowl.

WOW, you're too funny Sharon!
I will be making this soon, but Sharon, you made by day describing how to make this incredible dish. Right down to the "big-assed" bowl for the pasta! I love anything w/bacon and I make GREAT chicken or shrimp poppers using extra large jalapenos along with FROZEN Frigo brand cheese sticks (to stop the ooze of cheese)cut to the size of peppers and frozen beforehand and always wrapped in thick-cut peppered, good quality bacon. That's something I dont skimp on. GRILL IT! To die for. Company dish!
