These sweet and spicy bacon-wrapped scallops are the ideal blend of surf and turf.
1.5 lbs bay scallops
1 lb bacon (preferred maple)
2 T Sherry Wine
1 T Soy Sauce
1/2 t garlic powder
1 t crushed red pepper
1 T bread crumbs

Roll two bay scallops with 1/2 strip of bacon. Lay out on cookie sheet. Sprinkle garlic powder, red pepper and bread crumbs over scallops and bacon and then drizzle sherry and soy over.

Bake 10 minutes in preheated 450 degree oven. Roll scallops over carefully. Bake another 5-10 until bacon is well browned. Watch carefully; scallops can cook very quickly.

Pre-cook bacon first for best results
This is a good variation on a standard appetizer but like all bacon wrapped seafood, you need to precook the bacon before wrapping it around the scallops otherwise the bacon will be underdone or the scallops will be overcooked. Precook the bacon in your microwave for about 45 seconds to 1 minute per strip of bacon so that the bacon is still soft and malleable not crisp, then cook as directed but not quite as long so that the bacon is crisp and the scallops perfectly done.
