Oatmeal Waffles

Yield:  Makes 2 Belgian-style waffles
RECIPE INGREDIENTS
2 egg whites
1/2 cup uncooked quick or old-fashioned oatmeal
1/2 cup whole-wheat flour
1/2 cup cornmeal
1/2 cup enriched white flour
1 tablespoon baking powder
1-1/2 cups buttermilk
1 teaspoon vanilla extract
Frozen strawberries, for topping (optional)
DIRECTIONS
Lightly oil and preheat a waffle iron.


In a bowl, beat the egg whites until stiff.


In a second bowl, mix together the oatmeal, whole wheat flour, cornmeal, and white flour. Mix in the baking powder. Add the buttermilk and vanilla extract and fold in the beaten egg whites.


Pour half the batter into the waffle iron and bake until done. Repeat.


NOTE: I often serve these waffles with a puree of strawberries that I make by running a 10-ounce package of frozen strawberries through a blender for 30 seconds.


This batter also works for pancakes.
