Muesli-Apricot Squares with Yogurt Topping

RECIPE INGREDIENTS
For Squares:
1 cup untoasted muesli
1 cup self-rising flour
1 cup rolled oats
2/3 cup unsweetened flaked coconut
1 cup finely chopped dried apricots
1/2 cup packed dark brown sugar
3/4 cup butter
2 tablespoons dark corn syrup or golden syrup
1 large egg, lightly beaten
For Yogurt Topping:
2 tablespoons plain (natural) yogurt
1 1/2 cups confectioners' sugar, sifted

DIRECTIONS
TO MAKE SQUARES: Preheat oven to 350 degrees F. Lightly grease a 10-in square cake pan. In a large bowl combine the muesli, flour, oats and coconut. Add the apricots and dark brown sugar and stir in evenly. Melt together the butter and corn syrup in a small pan.


Pour over the dry ingredients, add the lightly beaten egg and mix well. Press into the prepared pan. Bake for 25-30 minutes. Allow to cool in the pan.


TO MAKE YOGURT TOPPING: Beat together the yogurt and confectioners' sugar until smooth.


Spread over the muesli mixture and cut into squares. Store in an airtight container.

Yum!
This turned out really well, and stayed together when I cut it. The yoghurt made a very nice addition to the icing. Hubby wont' stop eating it!
