Grilled Tuna and White Bean Salad

If you have leftovers, refrigerate them, but be sure to bring the salad back to room temperature before serving it again, or the dressing will be thick and lumpy.
RECIPE INGREDIENTS
For the Salad:
12 ounces fresh or frozen tuna steaks, 1/2 inch thick, or two 6-1/2-ounce cans solid white tuna, drained and broken into chunks
Olive oil or salad oil
8 ounces penne or other dried shaped pasta
1/2 cup olive oil or salad oil
1/4 cup lemon juice
19-ounce can cannellini beans or one 15-ounce can great northern beans drained and rinsed
2 medium tomatoes, coarsely chopped
1/2 of a medium yellow sweet pepper, cut into thin bite-size strips
For the Dressing:
2 shallots, finely chopped
2 tablespoons snipped fresh basil or 1 teaspoon dried basil, crushed
1/4 teaspoon salt
1/8 teaspoon pepper

DIRECTIONS
FOR THE SALAD:
If using tuna steaks, thaw if frozen. Measure thickness of fish. Brush each side of tuna with oil. Broil tuna for 4-6 minutes per 1/2 inch thickness, or till tuna flakes easily when tested with a fork, turning once. Slice tuna diagonally into thin strips.


In a large saucepan or pasta pot bring 3 quarts water to boiling. Add pasta. Reduce heat slightly. Boil, uncovered, for 12-14 minutes, or till al dente, stirring occasionally. (Or, cook according to package directions.) Immediately drain.


In a large bowl combine cooked fresh or canned tuna, hot cooked pasta, beans, tomatoes, and sweet pepper.


FOR THE DRESSING:
In a screw-top jar combine 1/2 cup olive oil or salad oil, lemon juice, shallots, basil, salt, and pepper. Pour dressing over pasta mixture; toss gently and serve.
