Baked Peach Pancakes

4 eggs
2 tablespoons sugar
1 1/2 cups milk
2 tablespoons vegetable oil
1/2 teaspoon salt
2 cups flour
4-5 medium peaches, peeled and sliced
4 tablespoons butter
1/2 cup sugar mixed with 1 tablespoon cinnamon
1/4 cup brown sugar
Beat eggs and add sugar, milk, oil and salt. Add flour and mix well. Let stand for 30 minutes.

Preheat oven to 375 degrees F.

Butter two 9 inch round cake pans and sprinkle with some of the cinnamon sugar mixture. Arrange peach slices on pans and sprinkle with remaining cinnamon sugar and brown sugar. Dot with butter. Pour batter over peaches and bake 30-35 minutes until top is golden.

I made these for my family last weekend. They were easy and delicious! They looked very impressive, too. Would be great for entertaining....brunch or dessert!
