3-Corn Casserole

This is a big favorite at our house for the holidays. Easy to prepare, stick it in the oven and serve warm! A great compliment to other side dishes like green bean casserole and sweet potato casserole, and unlike just corn, isn't all over the plate!
3-4 T. Butter
1/2 onion, chopped
1 large can chopped green chilis
3 eggs - well beaten
1 can whole kernel corn, undrained
1 can cream style corn
1 bag frozen white shoe peg corn
1 package corn muffin mix
1 bag shredded cheddar cheese
Heat oven to 350

Spray 2 quart casserole with Pam

saute onion and chilis in butter until onion is clear

Beat eggs

Add the three types of corn to the eggs

Add onion and chilis in butter to egg mixture

stir in corn muffin mix

sprinkle shredded cheese over top

Options: Can add jalapenoes, seeded and finely chopped, or can saute green bell peppers with onion instead of chilis.

Bake 55-65 minutes. Serve as side dish
