5-Layer Garden Casserole

With a few simple ingredients, turn vegetables and one pound of hamburger (or chopped mushrooms) into a tasty and colorful meal.
1 pound potatoes (russet)
1 pound carrots
1 15-oz can peas
1 can tomato soup
1 yellow onion
1 pound hamburger (ground turkey, Italian sausage)
1 Tbs garlic
1 tsp Salt
1 tsp pepper
(to make vegetarian, substitute 1 pound mushrooms roughly chopped and sauteed)
Peel and slice potatoes. Peel and cut carrots in half and then lengthwise into quarters. Drain peas and reserve juice. Mix pea juice with tomato soup and set aside.

Saute minced garlic until translucent. Add hamburger and saute until no longer pink, breaking into smaller pieces. Drain and set aside.

In bottom of casserole layer potatoes, carrots, peas, hamburger, and thinly sliced onions. Top with tomato soup mixture. Sprinkle with salt and pepper.

Bake in 350 degree oven for 35-45 minutes or until potatoes are fork tender. This will depend on the size of the casserole dish and how thick the potatoes are layered. Remove from oven and let sit for 10 minutes. Serve.

To make this dish vegetarian, substitute one pound of mushrooms roughly chopped for hamburger. May use portobello, shiitake, white mushrooms or a mixture. Saute mushrooms in small batches so they evenly brown. Layer and bake as before.
