This can be stretched to feed many and is fairly low cost. It tastes even better the next day, re-heated in a frying pan with a little margarine.
RECIPE INGREDIENTS
1 lb. ground beef
1 green pepper (or 1 bag or box of frozen)
1 yellow onion (or 1 bag or box of frozen)
1 lg. can crushed tomatoes (Pine Cone brand if available)
2 tbsp. margarine or olive oil
1 lb. elbow macaroni
oregano (to taste)
salt and pepper
DIRECTIONS
Start water to boil for macaroni.


If you use frozen peppers and onions you do not need to defrost them.


In a frying pan, sauté peppers and onions in margarine or olive oil until just soft. Remove from pan and set aside.


In the same frying pan add salt, pepper and oregano to hamburger and brown. Return the cooked peppers and onions to the pan, add crushed tomatoes. Simmer while macaroni is cooking. Adjust seasoning to taste.


Drain marcaroni, stir in the sauce and serve.

Classic New England Comfort Food
This is a wonderful dish from every New Englander's childhood memory. I add a little garlic powder and tomato paste with a pinch of sugar or Splenda. It does indeed taste even better the next day.
